Is there any better way to start your day than with a plate of warm, fluffy homemade pancakes? I’ve been a die-hard pancake fan. Of course, they are delicious on their own. But they also go well with any topic, whether it’s a drizzle of maple syrup, chopped fresh fruit, or a scoop of homemade vanilla ice cream with chocolate sauce and cherries on top.

I make a plate of healthy vegan pancakes when I’m in the mood for a healthy breakfast. This recipe is simple and quick. I can churn out a plate full of mini-pancakes in less than 20 minutes! They are the perfect breakfast for a lazy day. Plus, they are delicious.

To make my 3 ingredient vegan pancakes. You’ll only need two medium-sized bananas, 3 cups of instant oats, and 2 cups of your preferred plant-based milk. After you’ve gathered the ingredients, you’ll have to blend everything and cook the batter in a non-stick pan in several batches. As you can tell, these simple-to-make pancakes are vegan but can be gluten-free too! 

How to make the fluffiest vegan pancakes from scratch 

One of my favorite childhood memories is the smell of freshly-made pancakes early in the morning. Making fluffy vegan pancakes can be a challenging task. When substituting animal-sourced ingredients for plant-based ones, it’s easy to end up with flat, gummy pancakes. But after many tries and failed attempts, I’ve come up with what I think is the best vegan pancake recipe.

All you’ll need to make these fluffy vegan pancakes are six simple ingredients:

  • 1 ½ cups of all-purpose flour (or oat flour for gluten-free pancakes)
  • 1 ½ cups of soy milk (or any other plant-based milk of your choice
  • 1 tablespoon of baking powder
  • ¼ teaspoon of salt
  • 2 tablespoons of organic cane sugar
  • 3 tablespoons of melted vegan butter or coconut oil, plus some additional tablespoons for the pan

To make the batter, all you need to do is throw all the ingredients together in a blender and blend until smooth. Then, pour ¼ cup of the mix into a non-stick pan (or a lightly greased skillet) and cook it for three minutes or until bubbles appear around the pancake’s edges. Then, flip it and cook the other side for another three minutes. You’ll have to repeat this process six to eight times more until you’ve used all the batter.

To make these simple vegan pancakes, you’ll have to follow these simple steps:

  1. First, mix the flour, baking powder, sugar, and salt in a large bowl.
  2. Next, mix the milk and oil into the bowl with the dry ingredients until everything is combined.
  3. Let the batter rest for five minutes.
  4. Heat a non-stick pan over medium-high heat and add half a tablespoon of vegan butter or coconut oil.
  5. Pour ⅓ cup of the pancake mix into the pan and cook until bubbles begin forming on the edges, around 3 minutes.
  6. Flip the pancake and let the other side cook for another 3 minutes.
  7. Repeat the last two-step with the remaining batter.
  8. Serve and enjoy your pancakes!

For extra fluffy results, do not overmix the batter. A chunky-looking batter makes for the fluffiest pancakes. So don’t try to thin it out. Adding milk or water to the mix will make your pancakes flat and gummy. 

Another tip for the best vegan pancakes is to keep an eye on the pan’s temperature. If it gets too hot, you risk your pancakes cooking too quickly. Trust me; you won’t want to eat a plate of burnt pancakes.

Two things I love about this recipe are how simple to make it is and how easy it is to adapt it to your needs. For example, if you want gluten-free pancakes, you can substitute all-purpose flour for oat or almond flour. And if you wish for a protein-packed breakfast, you can use whole-grain flour instead, and you can even add a scoop of your preferred plant-based protein powder. You won’t even notice the difference, trust me.

The best toppings for vegan pancakes

Pancakes are one of my favorite breakfast foods because of how fun it is to serve them. I could spend hours on end plating and decorating pancakes. I love to stack my pancakes and top them with peanut butter, condensed milk, maple syrup, or vegan chocolate sauce

Then, I cut some fresh fruit and spread them on top of the pancakes. I like to use bananas, strawberries, apples, peaches, and even cherries sometimes, but you can add any fruits you like. In addition to fruits, I like adding almonds, coconut flakes, amaranth, chia seeds, and chocolate chips to my vegan pancakes. Adding any toppings, you enjoy in whatever combination works best for you is the idea. 

The plate is a blank canvas that needs a combination of different colors and textures to come to life. It is the perfect opportunity to let your imagination run wild. If you have kids or want to impress your guests, making a plate of delicious vegan pancakes or even a breakfast charcuterie board is a great choice.
